Martin Morales of Ceviche serves up a fantastic artichoke pie recipe, packed with Parmesan (or a similar vegetarian version) for extra umami-richness: “People in the Andes love a good pie as anything wrapped in pastry is portable and can be eaten cold or hot. You can find artichoke or chard pies in bakeries and cafés throughout the Andes. A good slice of this artichoke pie makes great food-on-the-go, but it’s also perfect eaten at home with an Ensalada Sierra or Solterito.”
