Ingredients
  • Dry cured smoked streaky bacon, 8 rashers (150g)
  • Brown Sugar, 10g
  • Plain Flour or Gluten Free Flour, 20g
  • Soy Sauce, 20g
  • Brown Sauce, 40g
  • Apple Juice, 180ml
  • Beef Stock, 1 litre

Method
  1. Start by chopping your bacon, roughly half centimetre pieces.
  2. Put a pan on a medium-high heat with a bit of olive oil and crisp up the bacon (keep stirring it so it doesn’t catch). It should take 3-4 minutes to crisp up.
  3. Reduce the heat and add the flour to the pan once the bacon is crispy. Stir together to make sure it’s proper mixed with the bacon fat.
  4. Add the brown sugar, apple juice, soy sauce and brown sauce; stir together.
  5. Gradually add in the beef stock to the pan.
  6. Turn the pan up to a high heat and keep stirring until the mixture has reduced by half. This will take about 10 minutes.
  7. Pour the gravy into another pan, straining the bacon off in the process.
  8. Let the bacon cool down slightly before blitzing in a food processor with a small bit of gravy.
  9. Add the bacon back into the gravy and season to taste with salt and pepper.
