This basil panna cotta from Macellaio RC is full of fragrant Liguarian flavour. Serve with some caramelised sugar decorations for a cheffy finish.

  • 6g gelatine leaves
  • 50g Basilico Ligure (Ligurian basil)
  • 85g caster sugar
  • 300ml double cream
  • 300ml whole milk

Method
  1. Soak the gelatine in ice-cold water until soft. Meanwhile, add the double cream, milk, and basil leaves to a pan and place over a medium heat.
  2. Warm gently until the mixture reaches 80°C — do not boil.
  3. Drain the gelatine and add it to the cream mixture, stirring until it dissolves. Pass the contents of the pan through a sieve into dariole moulds and place in the fridge to set.
  4. Serve with basil cress and caramelised sugar for decoration.
