Meant to share a recipe for these churros a while ago...we’ve had them as ice cream sandwiches, breakfast pastries, dipped into cajeta, with chocolate sauce, cinnamon sugar, eggs and bacon, etc...

Ingredients
  • 250g milk or water
  • 75g butter
  • Pinch of salt
  • 250g flour
  • 2 eggs
  • A few drops of vanilla essence or extract

Method
  1. Place butter and milk/water in a pot and bring to the boil.
  2. Add the salt and vanilla and decant mixture to a bowl.
  3. Add the flour and using a wooden spoon beat until a super smooth dough forms.
  4. Add one egg and beat again until fully incorporated – I normally use a kitchen aid or food processor but some elbow grease also works!
  5. Add the next egg and beat until a smooth dough forms.
  6. Place in a piping bag with the star attachment and let cool. Pipe out as spirals onto a baking paper dusted with some flour.
  7. Heat neutral oil to 180C and fry until golden brown.
