Social Pantry share a veggie spin on coronation chicken in this fun sharing plate, using the spiced cauliflower to fill hard taco shells. A fresh yoghurt-based slaw completes the dish.

Ingredients

For the Coronation Cauliflower

  • 1 medium sized cauliflower (must be ultra-fresh)
  • 1 tsp curry powder
  • 1 tsp ground coriander
  • 1 tsp cumin
  • 1 tsp onion powder
  • 100g mayonnaise
  • 40g dried apricots, chopped
  • 1 tbsp of chopped coriander
  • 1 tsp of chopped mint
  • zest of 1 lemon
  • 1 tsp lemon juice – or to taste
  • Good pinch of Maldon salt
  • Fresh cracked black pepper

For the Slaw

  • ¼ white cabbage
  • ¼ red cabbage
  • 1 carrot
  • 100g Greek yogurt
  • 2 tbsp. lemon juice
  • Good pinch of Maldon salt
  • Fresh cracked black pepper

For the tacos

  • 6 hard shell tacos

Garnish

  • 2 tbsp toasted almonds or sunflower seeds
  • Edamame Beans

Method
  1. Prepare your cauliflower by removing the leaves and breaking it down into florets. Boil until the florets are tender but have a bite to them, then drain.
  2. Mix all your ‘coronation’ ingredients in a bowl and season to taste.
  3. Thoroughly mix the cauliflower through the mixture, making sure it is properly coated. Place the coronation cauliflower in a gorgeous bowl and sprinkle over the garnish.
  4. To make the slaw, shred all of the vegetables and mix together in a bowl with the Greek yoghurt. Add in the lemon juice, salt and pepper to taste.
  5. To serve, pile the coronation cauliflower and slaw into the taco shells and garnish with the toasted nuts or seeds, and some edamame beans.
