  • Buttermilk (to cover chicken)

Brine (bring to a simmer and cool)⁣

  • 1 litre water ⁣⁣
  • 100g salt⁣⁣
  • For extra flavour add a tea bag of herbal tea

Dredge flour ⁣⁣(mix together)⁣

  • 300g flour⁣⁣⁣
  • 100g corn flour ⁣⁣⁣
  • 2 tsp's baking powder⁣⁣⁣
  • 1 tsp cayenne pepper⁣⁣⁣
  • 1 tsp five spice⁣⁣⁣
  • 1 tsp paprika⁣⁣⁣
  • 1 tsp garlic powder⁣⁣⁣
  • 1 tsp ground coriander⁣⁣⁣
  • 1 tsp black pepper ⁣⁣⁣
  • 1 tsp salt

  1. Brine chicken for 4 hours then wash and marinate in buttermilk⁣⁣⁣ for 24 hours ⁣⁣⁣
  2. Dredge in flour mix and fry till golden and cooked through⁣⁣⁣
