Jun Tanaka's glorious honey madeleine recipe will have you whipping up these classic French cakes at home in no time. Be sure to invest in a special madeleine mould before attempting this recipe.

  • 100g plain flour
  • 1 tsp baking powder
  • 1 pinch of salt
  • 50g caster sugar
  • 2 eggs
  • 30g honey
  • 1 lemon, zested
  • 75g melted butter
  • 1 tsp vanilla essence
  • Icing sugar, for dusting

Method
  1. Sieve the flour, baking powder, and salt into a bowl. Whisk the eggs with the sugar, lemon zest, vanilla essence, and honey in a separate bowl. Incorporate the dry ingredients into the egg mixture, then incorporate the melted butter and place in the fridge for 1 hour.
  2. Preheat the oven to 200°C. Grease the madeleine moulds with butter and dust with icing sugar.
  3. Once rested, transfer the batter to a piping bag and pipe into the madeleine moulds. Bake in the oven for 5 minutes, then remove and dust with icing sugar.
