For those seeking beauty in simplicity, this margherita pizza recipe is hard to beat. The timeless combination of Fior Di Latte cheese, fragrant basil, and an intense tomato sauce are a marriage made in heaven, mingling atop a super crispy base which requires no rising time — a massive bonus for when you want your pizza fix in a hurry.

  • 6 balls of pizza dough
  • 1 batch of pizza sauce
  • 420g Fior Di Latte mozzarella
  • 6g fresh basil
  • 1 pinch (per pizza) of dry oregano

Method
  1. Preheat the oven to 190°C/gas mark 5. Place a baking sheet or two in your oven to preheat as well.
  2. Flour a work surface and stretch each dough ball out into a flat, round pizza base.
  3. Add a few spoonfuls of the pizza sauce (don't add too much), and spread it out over the bases using the back of a spoon.
  4. Divide the Fior Di Latte between your pizzas, ensuring the pieces are spaced out evenly. Sprinkle over some dried oregano.
  5. Carefully transfer each pizza to a preheated baking tray (using a pizza pelle preferably, or another baking sheet that has been liberally floured) and cook for 20—25 minutes, until the base is browned and crisp and the cheese has melted. Add the fresh basil leaves and serve immediately.
