This super simple one-pot dhal recipe from Spice Box is full of warm, comforting flavour, and uses nutritious and fast-cooking red lentils so you can whip up this delicious midweek dish in a matter of minutes.

2 tbsp vegetable oil
2 tsp cumin seeds
1 green chilli
2 garlic cloves, peeled and crushed
1/2 white onion, sliced
200g red split lentils, rinsed
½ tsp salt
600ml boiling water
1/2 tsp turmeric
2 large tomatoes, diced

Heat the oil in a large saucepan. Add the cumin seeds, green chilli, and garlic. Fry until golden, then add the onion and salt.
Add the lentils and water to the pan, followed by the turmeric and tomatoes.
Boil for 10—15 minutes, until the lentils are soft but still have some shape. Taste for seasoning and serve.
