Tequila gives you zing! It’s a spirit I immediately reach for ahead of a night out; it reminds me of past celebrations, and it combines so well with other zesty ingredients that you can’t help but feel perked up. And forget any negative memories of bad tequila: grab a bottle of the real stuff (100% agave) and give this cocktail a go. I love the life it gets from a good old shaking, but if you’re making for a big group you can build it in the glass too. The savoury note in the tequila means it pairs brilliantly with food, too.

Ingredients
  • 1 pinch pink salt (Himalayan, not curing salt)
  • 1 tablespoon lime juice
  • 1 tablespoon pink grapefruit juice
  • 1 tablespoon sugar syrup
  • 2 shots (50ml/2oz) blanco tequila (100% agave)

  • Cubed ice
  • Chilled soda, to finish
  • Grapefruit, to garnish

  1. Add all the ingredients to a shaker and short-shake over cubed ice (just a couple of quick blasts; this drink is served long so doesn’t need to be diluted too much at this stage). Double strain into an ice-filled highball. Crown with a splash of soda and garnish with a slice of grapefruit.

Add some magic

  1. On occasion I’ve served this at parties, carbonated from a syphon: simply add all the mix (around 8 serves) plus 2 shots (50ml/2oz) of water per serve to a syphon and charge with CO2. Gently dispense over ice. Also, a couple of other flavours such as raspberry or basil can be added to great effect. You can even try topping the drink with lager instead of soda, which produces a pleasant malty bitterness and only boosts food-matching cred.
