This pink pickled onion recipe will not only add a pleasing acidity to every dish you sprinkle them on, says Club Mexicana chef and founder Meriel Armitage, they also bring plenty of visual appeal to just about any dish: "Pink pickled onions are the jewel in our Club Mex crown! Any taco can look pretty with these pink beauties on top of it! They bring a disco vibe to every dish, and are well worth the effort for a taco party (even for one!). A jar of these can sit in your fridge for a few weeks — sprinkle them over tacos, roll into burritos, even add to leftover pizza. They not only look good, they taste banging too!"

  • 230ml fresh lime juice
  • 230ml white vinegar
  • 1 tbsp salt
  • 3 tbsp sugar
  • 250g red onion, finely sliced

Method
  1. In a medium saucepan, make a brine by combining the lime juice, white vinegar, salt and sugar. Bring to the boil.
  2. Meanwhile, place the sliced onions in a heatpproof bowl.
  3. Remove the brine from the heat and pour over red onions.
  4. Cover the bowl and leave to pickle for a minimum of 1 hour.
  5. After 24 hours, place the pickled onions in the fridge.
  6. Keep until they lose their crunch!
