An incredibly simple marinade that packs in a whole lot of flavour. The prawns are best cooked on the BBQ, but almost as good pan fried

Ingredients
  • 16 x prawns (ec2 size)
  • 20g fennel seeds
  • 20g crushed garlic
  • 1 deseeded roasted red pepper
  • 2 large deseeded chilli
  • A nice splash of good quality sherry vinegar
  • 20ml extra virgin olive oil

Method
  1. Blitz all ingredients in a food processor until smooth, peel prawns leaving the head & tails still on and marinate prawns for 10 to 20 minutes.
  2. Season with salt & pepper, BBQ or pan fry until cooked, serve with a shaved fennel, rocket & chilli salad.
