16 x prawns (ec2 size)
20g fennel seeds
20g crushed garlic
1 deseeded roasted red pepper
2 large deseeded chilli
A nice splash of good quality sherry vinegar
20ml extra virgin olive oil

Blitz all ingredients in a food processor until smooth, peel prawns leaving the head & tails still on and marinate prawns for 10 to 20 minutes.
Season with salt & pepper, BBQ or pan fry until cooked, serve with a shaved fennel, rocket & chilli salad.
