Imagine your mums roast chicken dinner in a mayonnaise

Chicken oil

  • Chicken carcass 1
  • Chicken Wings 1000g
  • Garlic bulb 1
  • Onion 1
  • Thyme 20g
  • Sage 20g
  • Rapeseed oil 3600g

Roast chicken Mayo

  • Chicken Oil 800g
  • Maldon salt 6g
  • White wine vinegar 14g
  • Dijon mustard 14g
  • Egg yolks 100g

Chicken skin salt

  • Chicken skin 300g
  • Kosher salt (any good salt will do) 100g

Method
  1. Set the oven to 200c and cook the chicken wings and chicken carcass in a deep pan until golden (around 45 mins)
  2. Split the onion and garlic in half and place in thedeep pan along with the thyme, sage and rapeseed oil.
  3. Roast overnight at 95 degreees c
  4. Leave the roast chicken oil to cool and set aside
  5. To make the mayo. Using a whisk or a blender to combine the egg yolks, dijon mustard, white wine vinegar and salt.
  6. While continuing to whisk, slowly add the roast chicken oil until fully emulsified.
  7. To make the chicken skin salt lay out the chicken skin on oven racks and roast in a hot oven (200c) for around 18 minutes unitl the skin is dry, crispy and golden.
  8. Once cool blitz the chicken skin in a robot coupe (or pestle and morter) with kosher salt. This should be done in a 70% salt to 30% chicken skin ratio.
  9. Use the chicken skin salt to garnish on top of the Roast chicken mayo
