Giffords Circus is a magical village green circus that tours England throughout the summer, created by husband and wife team Nell and Toti Gifford in 2000.
Circus Sauce is their unique 60-seat restaurant that follows the circus to each ground. The kitchen is housed in two magnificent wagons with an awning attached to the side, providing space for grand candle-lit, communal oak tables. Each evening after the final show of the day, three delicious courses are served up on candle-lit oak tables in their tent lined with circus tapestries. They use locally sourced fresh ingredients to produce traditional British meals night after night, but because it is a travelling restaurant, ‘local’ changes from week to week.

Nell sadly passed away in late 2019. Giffords Circus Cookbook, from which the recipes on The Pass are taken, is dedicated in her honour.
